Extra virgin oil is unique amongst vegetable oils in that fit is produced using only a simplemechanical process that extracts the oil directly from the pulp of the fruit. The production processhas to be capable of extracting the maximum quantity of oil from healthy fruit withoutcompromising quality.For this reason we at Il Frantoio dei Cinque Colli ("Olive press of the 5 hills") alter many years ofexperience in the business have now adopted a modem but "cold " extraction technique. This leavesintact the physical and organic chemical composition of the oil. The equipment we use is producedby "Officine Meccaniche Toscane" who, alter years of research have created a madrine that doesnot require the use of a "final separator" - thereby avoiding an excessive "beating"of the pulp.
